Allergy Friendly, Preservative Free Sausages and Deli

We are asked many questions about what is in our sausages, bacon and deli meats. We often answer with a list of everything that is not in our sausages. All our sausages, deli meats and bacon do not contain any cultured celery extract, MSG, nitrates, nitrites, sulfates, sulphites, egg, gluten, dairy, peanuts or tree nuts. Our sausages are made up of our certified organic meat, organic spices, sea salt and when needed for flavour certified organic honey or certified organic maple syrup.


Cultured celery extract or other cultured plant extracts are a form of nitrates and nitrites and are regulated by the Canadian government. They are often put on deli products that have “natural” on the label. Often there is a disclaimer in small print that says “except for those naturally occurring in the ingredients”.  Any product that is labeled as “cured” has to contain a minimum amount of nitrates or nitrites. This extract is now being used a lot in natural products however they still are required by law to contain the same amount of nitrates and nitrites as the conventional cured products. We do not use any cultured celery (or any vegetable) extract, nitrates, nitrites, sulfates, or sulphites in our products.


All of our spices are certified organic which means they have not been sprayed with any pesticides, herbicides or fungicides. It also means that there are no GMO’s and they have not been irradiated. The honey that we use is certified organic. This means that the honey was collected from organic fields and natural woodlands that have not been sprayed or contain GMO crops. The maple syrup is certified organic and is collected from organic maple trees that have not been treated with pesticides or insecticides. We list all the ingredients on our labels as we want the consumer to know exactly what they are eating, including every spice that we put in our products.


No fillers or binders are used in our products. Our chicken sausages are made up of a mix of brown and white chicken meat and chicken skin. The chicken skin adds the necessary moisture to the lean chicken meat in order that they stay nice and moist when you cook them and don’t dry out. No soy, breadcrumbs, potato starch, milk or buttermilk powder, corn flour, corn starch, soy protein, carrageenan, dextrose, corn syrup solids, or xanthan gum is used as a binder or a filler. Our pork sausage is a mix of pork meat and pork fat. All of our smoked sausages are smoked traditionally in a smokehouse using wood chips. No liquid smoke is used.


Our family has severe food allergies and celiac disease and we know how important it is to know what the ingredients are in your food. We started making the sausages, bacon and deli meats to feed our family safe food without chemical additives, gluten, dairy, soy, nuts and egg.
